Barbecued Guava Shrimp With Banana Salsa
Serves 4
    Shrimp Ingredients:
  • 1 Pound 26-30 Shrimp -- Cleaned & Deveined
  • 2 Tablespoons Water
  • Banana Salsa

    Jerk Seasoning Ingredients: (Mix Well)
  • 1 Teaspoon Allspice
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Sugar
  • 1 Teaspoon Worcestershire Sauce
  • 1 Teaspoon Minced Green Onions
  • Tabasco Sauce -- To Taste

    Barbecue Sauce Ingredients:
  • 1/4 Cup Catsup
  • 2 Tablespoons Water
  • 1 Tablespoon Guava Paste
  • 1 Tablespoon Cider Vinegar
  • 1 1/2 Teaspoons Honey
  • 1 Teaspoon Brown Sugar
  • 1/2 Teaspoon Jerk Seasoning
  • 1/2 Teaspoon Canola Oil

    Banana Salsa Ingredients: (Mix Well Until Sugar Is Dissolved)
  • 3 Large Tomatoes, Seeded -- Diced 1/4"
  • 1 Large Banana -- Diced 1/4"
  • 1/2 Cup Finely Chopped Red Onion
  • 3 Tablespoons Lemon Juice
  • 1 1/2 Tablespoons Brown Sugar
  • 2 Teaspoons Cilantro
    Instructions:
  1. Blend barbecue sauce ingredients together well in a blender. Mix together shrimp and sauce and marinate for 2 hours.

  2. Drain shrimp, add water to sauce and cook at a slow boil.

  3. Grill shrimp and brush with sauce, when done, top each shrimp with banana salsa.
