Barbecued Guava Shrimp With Banana Salsa
|
Serves 4
|
Shrimp Ingredients:
- 1 Pound 26-30 Shrimp -- Cleaned & Deveined
- 2 Tablespoons Water
- Banana Salsa
Jerk Seasoning Ingredients: (Mix Well)
- 1 Teaspoon Allspice
- 1 Teaspoon Cinnamon
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Black Pepper
- 1 Teaspoon Sugar
- 1 Teaspoon Worcestershire Sauce
- 1 Teaspoon Minced Green Onions
- Tabasco Sauce -- To Taste
Barbecue Sauce Ingredients:
- 1/4 Cup Catsup
- 2 Tablespoons Water
- 1 Tablespoon Guava Paste
- 1 Tablespoon Cider Vinegar
- 1 1/2 Teaspoons Honey
- 1 Teaspoon Brown Sugar
- 1/2 Teaspoon Jerk Seasoning
- 1/2 Teaspoon Canola Oil
Banana Salsa Ingredients: (Mix Well Until Sugar Is Dissolved)
- 3 Large Tomatoes, Seeded -- Diced 1/4"
- 1 Large Banana -- Diced 1/4"
- 1/2 Cup Finely Chopped Red Onion
- 3 Tablespoons Lemon Juice
- 1 1/2 Tablespoons Brown Sugar
- 2 Teaspoons Cilantro
Instructions:
Blend barbecue sauce ingredients together well in a blender. Mix together shrimp and sauce and marinate for 2 hours.
Drain shrimp, add water to sauce and cook at a slow boil.
Grill shrimp and brush with sauce, when done, top each shrimp with banana salsa.
