his is a quick and easy salad that can help satisfy your goal of eating one serving of orange-red vegetables a day. Don’t worry if you have some leftover, the salad is hearty enough to taste great the next day, too.
Ingredients:
- 2 tablespoons fresh lime juice (about 1 large lime)
- 1 teaspoon Spice Hunter organic ground cumin
- 1 tablespoon Napa Valley organic olive oil
- 2 8-ounce bags Ready Pac shredded carrots or 4 large carrots shredded in the food processor
- 1 12-ounce bag Nature Sweet cherry tomatoes, quartered
- 2 tablespoons cilantro leaves, chopped
Instructions:
In a small cup or bowl, whisk together the lime juice, cumin and olive oil.
Combine carrots and tomatoes in a serving bowl. Toss with lime juice dressing and sprinkle chopped cilantro over the top. Refrigerate until ready to serve.
