Cherry Clouds

ou may use fresh or frozen cherries to make this simple summer dish. If using fresh, you'll need a cherry or olive pitter to remove the pits. Be sure to give the fresh cherries 20 minutes or so to marinate in the amaretto before draining and baking. The amaretto adds a rich almond flavor to the cherries. This recipe can easily be multiplied.

    Ingredients:
  • 1 1/2 cups fresh pitted cherries or Dole frozen cherries
  • 2 tablespoons Amaretto di Saronno liqueur
  • 6 tablespoons Horizon Organic low-fat sour cream
  • 2 tablespoons Hain organic brown sugar
    Instructions:
  1. Place fresh or frozen cherries in a bowl and toss with amaretto. Let stand 20 minutes, at least until frozen cherries defrost, stirring occasionally. Drain any liquid from them.

  2. Preheat oven to 300º Fahrenheit.

  3. Divide cherries among three ½-cup ramekins. Cover and smooth the tops of each ramekin with two tablespoons of sour cream. Sprinkle the tops of each with two teaspoons of brown sugar.

  4. Place ramekins on a heavy baking sheet or oven-proof dish. Bake for 11-13 minutes, until sugar melts. Serve immediately.
