customer at our Irvine store asked me to make that ubiquitous homemade chocolate chip cookie recipe a little less sinful. I've managed to cut out 35 calories, 2.5 grams of fat, and 2 grams of saturated fat per cookie. I use Neufchâtel cheese (reduced-fat cream cheese) in place of 75% of the butter to cut the fats, but some butter is necessary for the crumbly cookie texture and I've found that the key is to melt it first. I also replace some of the white flour with oats and whole-wheat flour to help reduce the calories and add fiber.

    Ingredients:
  • - cooking spray
  • 6 ounces Organic Valley Neufchâtel cheese (reduced-fat cream cheese), softened
  • 4 tablespoons Horizon Organic unsalted butter, melted
  • ½ cup Hain Organic brown sugar, packed
  • ½ cup granulated sugar
  • 1 teaspoon vanilla
  • 1 cup Pillsbury unbleached all-purpose flour
  • ½ cup Arrowhead Mills stone ground organic whole-wheat flour
  • ½ cup Quaker quick-cooking oats
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 Eggland's Best egg
  • 1 Eggland's Best egg yolk, white discarded
  • 1 ¾ cups Nestlé Toll House chocolate chips (about 12 ounces)
    Instructions:
  1. Preheat oven to 375°. Spray two cookie sheets with cooking spray.

  2. Combine Neufchâtel cheese, melted butter, sugars, and vanilla in the bowl of a stand mixer. In a separate bowl, combine flours, oats, baking soda, and salt.

  3. Begin to beat cream cheese, butter, and sugar mixture on medium speed, scraping down sides of bowl as necessary. When creamy, add in the egg and egg yolk one at a time, beating well after each addition. While still beating, slowly pour in the flour mixture. When well mixed, stop beating and stir in the chocolate chips.

  4. Use a soup spoon to drop scant spoonfuls (about 2 teaspoons) of batter onto sheets. Flatten cookies with your fingertips or with the back of the spoon. Bake for 10-12 minutes, depending on how well done you like your cookies.
