Garlic Spinach with Lemon
Serves 4
his easy vegetable is so versatile. Serve it with chicken, fish, beef, or any Italian recipe. Spinach contains lutein, a phytonutrient vital for healthy eyes.
Ingredients:
- 2 teaspoons Napa Valley organic olive oil
- 2 cloves garlic, minced
- 1 1/4 pounds bulk organic baby spinach, washed
and drained, but not dried
- 1/2 lemon, juiced
Instructions:
Heat oil over medium-high heat in a medium or large pot with a lid. Add garlic and cook until fragrant, about 30 seconds. Carefully add the spinach and toss with the oil and garlic. Cover and allow to wilt, about 2 minutes. Remove from heat, drain off any water and season with lemon juice. Serve immediately.
