Green Beans with Caramelized Shallots

Serves 4
his dish is a great Thanksgiving alternative to green bean casserole, since it's much lighter than the traditional. It also takes simply steamed green beans to the next level.
Ingredients:
- 3 medium Melissa's organic shallots, peeled, trimmed, and thinly sliced into little rings
- 5 tablespoons balsamic vinegar
- 1 12-ounce package French green beans, ends trimmed
- 2 teaspoons Napa Valley organic olive oil
- 1/8 teaspoon salt
- ¼ cup Flanigan Farms sliced almonds
Instructions:
Soak shallots in vinegar until they soften slightly, 20-30 minutes.
Steam green beans by adding about 1 inch of water to a large pot with a lid. Place a vegetable steamer basket inside. Cover and bring to a boil. Add green beans, cover and cook until crisp-tender, about 8 minutes.
While cooking, heat oil over medium-low heat in a skillet. Add shallots, vinegar, and salt, stirring constantly until browned and caramelized. When almost all of the vinegar is evaporated, add almonds to toast. Cook about 2 more minutes. Toss with green beans and serve.
