Halibut with Apricot-Avocado Salsa

his is an easy and fresh summertime recipe. The Jamaican jerk seasoning adds kick but not overwhelming spice to the fish. If you can, try to make the salsa at least an hour before you serve it so the flavors will fully develop. Remember to dice the apricots and avocado to the same size.
Ingredients:
2 apricots, diced (about 1 cup)
1/2 medium red onion, minced
1 red jalapeņo pepper, seeded and minced
1 small clove Melissa's organic garlic, minced
1/4 cup fresh cilantro leaves, minced
1/2 large or 1 small avocado, diced
2 tablespoons fresh lime juice
1/4 teaspoon salt
4 4-ounce halibut filets
- olive oil spray or 2 teaspoons olive oil
1 1/2 tablespoons Spice Hunter Jamaican jerk seasoning blend
1 lime, quartered
Instructions:
Combine the apricots, onion, jalapeņo, garlic, cilantro, avocado, lime juice, and salt in a small glass bowl. Cover and chill while you prepare the rest of your meal.
Preheat the broiler. Spray broiler pan with olive oil spray. Spray halibut with olive oil spray or brush on olive oil and season with jerk seasoning, turn, oil and season other side. Broil for 3 1/2 minutes on each side. Top halibut with salsa and serve with lime wedges.
