've carefully selected all of the ingredients in this recipe to help you lower your total and LDL ("bad") cholesterol. Please try it with the okra and if you don't like it, then just leave it out and increase the amount of asparagus you use next time. If you don't care for spicy food, then use about 1/8 teaspoon of the crushed red pepper flakes and increase the garlic.
Ingredients:
- 1½ tablespoons Napa Valley organic olive oil
- ½ cup Pacific Natural Foods organic vegetable broth
- ¼ teaspoon Spice Islands crushed red pepper flakes
- 1 small bunch asparagus, trimmed, cut on the bias into 1-inch pieces
- ¼ pound fresh small okra, stems cut off close to the stem end
- 1/3 pound fresh shiitake mushrooms, stems removed, thinly sliced
- 2 cloves Melissa's organic garlic, minced
- 1/8 teaspoon salt
- ¼ teaspoon Spice Islands fine-grind black pepper
Instructions:
Heat a large 12-inch skillet over medium-high heat and add the oil, broth and red pepper flakes. When hot, add the asparagus and okra and cook, stirring often, two minutes. Add mushrooms and garlic and cook about five more minutes, until asparagus and okra are fork-tender. Remove from heat and season with salt and pepper.
