Maple Mashed Sweet Potatoes

Serves 20
ou may wish to set aside your diet…this is a tempting mixture of holiday flavors and richness to be enjoyed occasionally.

INGREDIENTS:
12 Pounds Sweet Potatoes
1 Cup Butter, melted
1 Cup Whipping Cream
4 Tablespoons Pure Maple Syrup
2 Teaspoons Salt
1 Teaspoon Black Pepper

DIRECTIONS:
– Prick each potato 2 times with a fork and bake on a foil lined sheet pan in a 400° F oven for about 1 hour or until very tender. Remove from oven and cool slightly.
– Halve the potatoes lengthwise and scoop out the flesh into a large bowl. Mash the potatoes in a mixer with the whip attachment or use a hand masher.
– Stir in the butter, maple syrup, cream, salt and pepper and whip in well until smooth. Serve hot.
PRESENTATION NOTES:
Delightful when topped with crushed Pepperidge Farm Lemon-Nut cookies.
