Mexican Hot Chocolate

ark chocolate and cocoa powder contain potent antioxidants, like those found in green tea and red wine, that may help prevent certain cancers and atherosclerosis as well as raise HDL (good) cholesterol levels. Although chocolate contains saturated fat, most of it is in the form of stearic acid, which does not appear to adversely affect cholesterol levels. This healthy dessert is also an excellent way to sneak in some bone-building calcium.
Ingredients:
- 2 cups Horizon Organic nonfat milk
- 2 cinnamon sticks
- 2 teaspoons Scharffen Berger unsweetened cocoa powder
- 1 ounce Scharffen Berger 70% cacao bittersweet chocolate, coarsely chopped
- 1 tablespoon Hain Organic sugar, or to taste
Instructions:
Combine all the ingredients in a medium saucepan. Cook over medium-low heat, stirring constantly to melt the chocolate.
When chocolate is melted, carefully remove the cinnamon sticks. Use a hand mixer, a blender, or a whisk to beat the hot chocolate until it is frothy. Serve immediately.
