Peasant Cheese Quiche

The graham cracker crust provides a uniquely rustic taste to this light quiche.
Add any vegetables you like for color and flavor.
Serves: 6 (Serving size: 1/6 of Pie)
Ingredients:
- 2 cups grated low-fat or reduced-fat cheese (try Jarlsberg Lite with 3.5 grams fat per oz.)
- 2 Tbsps. flour
- ¼ cup chopped onion
- 1 cup egg substitute or 2 eggs plus 4 egg whites
- 1 cup 1% milk
- Pepper to taste
- Prepared graham cracker pie crust
Instructions:
- In a medium-sized bowl, mix grated cheese and onion with flour.
- In a separate bowl, beat eggs and add milk. Stir in cheese mixture and pour into pie crust.
- Bake in preheated 350° F oven for 40-45 minutes until inserted knife pulls out clean.
