Personal Pizzas, A Kid-Friendly Recipe

ou can get a lot of the ingredients you need for the pizzas from our salad bar. Only a little of each of the vegetables are required, so save time and money by picking up broccoli, cherry tomatoes, corn and even olives at the salad bar. Feel free to allow kids to get creative with the toppings-these are just suggestions. If they like onions, peppers, artichoke hearts, or mushrooms, go ahead and offer those as toppings, too.
You will need:
An oven
A baking sheet
Oven mitts
Tongs
A tablespoon
A knife
Ingredients:
- Sahara whole-wheat pitas
- Classico Tomato and Basil pasta sauce
- Italian herb seasoning
- S&W low sodium black beans, rinsed and drained
- Corn kernels, rinsed and drained
- Lindsay sliced black olives, rinsed and drained
- Steamed broccoli, torn into small pieces
- Cherry tomatoes cut into small pieces
- Sargento pizza double cheese blend of part-skim mozzarella and cheddar
Instructions:
Preheat the oven to 425°F. Place the pita on the baking sheet and toast for 2 minutes. Put on your oven mitts to take the baking sheet out of the oven. Use the tongs to flip the pita over. Put the pita back in the oven and cook for 2 more minutes. Use the mitts to take the baking sheet out of the oven and place it on the counter to let the pita cool.
Scoop 2 tablespoons of tomato sauce onto the pita and spread it around with the spoon, leaving a little room around the edges for the crust. Pinch a little bit of Italian herbs between your fingers and sprinkle over the sauce.
Scoop 1 tablespoon of black beans and sprinkle them on the pizza.
Scoop 1 tablespoon of corn and sprinkle it on the pizza.
Scoop 1 tablespoon sliced olives and sprinkle it on the pizza.
Arrange 4 or 5 pieces of broccoli on the pizza.
Arrange pieces of 2 cut-up tomatoes on the pizza.
Sprinkle 3 tablespoons of cheese over the top.
Put the pizza back in the oven and cook for 9 minutes. Use your oven mitts to take the pizza out when it's done and let it cool a little before you cut it into four pieces.
