Winter Caprese
Serves 4
This unusual twist on Italian Caprese (tomatoes, mozzarella and basil) makes a great appetizer or side dish when you’re in the mood for something a little bit decadent. Burrata cheese is an extra-flavorful and creamy version of mozzarella cheese. - Jessica Siegel, Registered Dietitian
1 12-ounce package Nature Sweet cherry tomatoes on the vine -olive oil spray or 1/4 teaspoon Napa Valley organic olive oil 1/8 teaspoon kosher salt 1/4 pound piece Tutto Latte Burrata cheese, diced 1 tablespoon DeCecco basil pesto at room temperature
– Preheat the oven to 400º Fahrenheit. – Place tomatoes on a baking sheet and spray them or brush them lightly with olive oil. Sprinkle with salt. Roast tomatoes about seven minutes, until they begin to shrivel. Meanwhile, gently toss the diced cheese with the pesto. – Remove tomatoes from the vine and place them on a plate next to the Burrata cheese. Serve immediately. |
