Poached Apricot Yogurt
Serves 4

Poaching fresh apricots with honey and ginger brings out their unbelievable flavor. This recipe makes a great dessert or homemade snack. If you have pretty glass dessert bowls use them to make an appetizing layered presentation.

    Ingredients
    1 cup water
    1/3 cup honey
    1 teaspoon ground ginger
    8 fresh apricots, halved, pits removed
    4 cups Horizon Organic plain nonfat yogurt
    Directions
    – Combine water, honey, and ginger in a large, shallow saucepan with a lid. Bring to a boil over high heat and allow to boil for three minutes
    – Reduce heat to medium-low and place apricots cut side down in the pan. Cover and cook 5-10 minutes, until tender. Remove from heat and take out apricots with a slotted spoon or fork. Remove any skin from the fruit. Allow apricots and syrup to cool.
    – Stir syrup into yogurt. Place 1 cup of yogurt in each dessert bowl and top with 4 apricot halves.
