Carrot and Tomato Salad with Lime Dressing
Serves 8

This is a quick and easy salad that can help satisfy your goal of eating one serving of orange-red vegetables a day. Don’t worry if you have some leftover, the salad is hearty enough to taste great the next day, too.

    INGREDIENTS:
    2 tablespoons fresh lime juice (about 1 large lime)
    1 teaspoon Spice Hunter organic ground cumin
    1 tablespoon Napa Valley organic olive oil
    2 8-ounce bags Ready Pac shredded carrots or 4 large carrots shredded in the food processor
    1 12-ounce bag Nature Sweet cherry tomatoes, quartered
    2 tablespoons cilantro leaves, chopped
    DIRECTIONS:

    – In a small cup or bowl, whisk together the lime juice, cumin and olive oil.

    – Combine carrots and tomatoes in a serving bowl. Toss with lime juice dressing and sprinkle chopped cilantro over the top. Refrigerate until ready to serve.
