Winter Green Salad with strawberries
Serves 4
This is a wonderfully refreshing salad that is complemented by fresh winter apples and strawberries. The Balmy balsamic cream is a syrupy balsamic vinegar reduction that is slightly sweeter than regular vinegar. Use any balsamic vinegar to thin the dressing, and try to buy organic strawberries and apples when they're available.
2 1/2 tablespoons De Nigris Balmy balsamic cream 2 teaspoons balsamic vinegar 1 tablespoon Napa Valley organic olive oil 1/8 teaspoon salt 1/8 teaspoon pepper 1 medium Fuji apple, cored and cut into eight wedges 1 bag Ready Pac organic Mesclun blend spring mix, washed and dried 1/3 cup Flanigan Farms walnut halves 1 pint (small basket) fresh strawberries, washed, hulled and quartered lengthwise 4 tablespoons Chavrie goat cheese
– In a small bowl or cup, combine the vinegars, olive oil, salt, and pepper. Whisk together and set aside. – Use a sharp knife to carefully cut each apple wedge into three thin wedges, so you end up with 24 slices. Combine in a salad bowl with lettuce, walnuts, and strawberry halves. Whisk dressing again and toss with salad. Divide salad among four salad plates and place one tablespoon of goat cheese on each plate. |
