Spanish Watermelon Salad
Serves 4

I enjoyed a salad like this one in Spain last summer. It is very light and refreshing when it's hot outside. This can be served as a first course, side dish or not-so-sweet dessert. You may add a bit of crumbled feta cheese to make this a more exotic and savory dish, like they do in Spain.

    Ingredients
    1 package Juice Harvest cut watermelon hearts, each heart diced into 16 bite-sized cubes to make 3 cups
    1/2 medium cucumber, peeled and diced like the melon to make 1 cup
    2 tablespoons fresh mint leaves, slivered, lightly packed
    2 tablespoons fresh lime juice (about 1 medium lime)
    1/8 teaspoon coarse-ground black pepper
    1/8 teaspoon kosher salt
    Directions
    – Combine watermelon, cucumber and mint in a large bowl. Pour the lime juice over the fruit and season with pepper and salt. Gently toss or cover and shake to mix without crushing the watermelon. Serve immediately or refrigerate before serving. Garnish with whole mint sprigs if desired.
