Pete's Pumpkin Bars

Serves 12
f you just can't take the thought of your holiday without the distinquished taste of pumpkin, but you want something a little different than the standard pumpkin pie, these bars are the perfect choice. A nice, moist, dense bar topped with an all-time favorite cream cheese frosting with a compliment of orange. Simply irresistable!

INGREDIENTS:
4 Large Eggs
1 2/3 Cups Sugar
1 Cup Canola Oil
2 Cups Canned Pumpkin
2 Cups All Purpose Flour
2 Teaspoons Baking Powder
1 Teaspoon Ground Ginger
1/2 Teaspoon Ground Cloves
1/2 Teaspoon Nutmeg
TOPPING:
3 Ounces Cream Cheese
1/2 Cup Unsalted Butter
2 Teaspoons Orange Extract
2 Cups Powdered Sugar

DIRECTIONS:
– Pre-heat oven to 350° F.
– In a mixer, beat the eggs sugar and oil. Add the pumpkin and beat until smooth, add the baking powder, baking soda, flour and spices.
– Pour batter into a greased 10"X15" jelly roll pan. Bake for 25 to 30 minutes, or until a toothpick comes out clean when inserted.
– Cool and frost. Cut into 2"X7 1/2" bars and serve.
PRESENTATION NOTES:
Garnish each piece with orange rind curls.
