Pumpkin Pie Smoothies, A Kid-Friendly Recipe*

umpkin pie is a special occasion food that we enjoy for Thanksgiving. These smoothies are a great way to enjoy the health benefits of pumpkin any day this season. You'll get the goodness of beta-carotene rich pumpkin, plus some protein and vitamin C, but minus the fat and extra sugar.

You will need:

A can opener ♦  A spoon ♦  Measuring cups ♦  A blender  ♦ 
A knife ♦  Measuring spoons ♦  Glass measuring cup ♦  2 drinking glasses
    Ingredients:
  • 1/2 cup Libby's canned easy pumpkin pie filling
  • 4 ounces (1/3 package) Melissa's organic silken tofu
  • 1/4 teaspoon vanilla extract
  • 3/4 cup Juice Harvest fresh organic orange juice
  • 3 cubes ice
    Instructions:
  1. Use a can opener to open the canned pumpkin. Scoop the pumpkin with a spoon into the 1/2 cup measuring cup until it is full. Put the pumpkin to the blender.
  2. Open the box of tofu carefully by following the directions on the package. Shake it gently until the block of tofu slides out. Look at the tofu and imagine two imaginary lines that would cut it into three equal pieces. Cut the block along one of those lines and put the smaller piece (4 ounces) into the blender.
  3. Use your 1/4 teaspoon measuring spoon to measure 1/4 teaspoon of vanilla into the blender.
  4. Shake the bottle of orange juice really well (make sure it is closed first). Open it up and pour 3/4 cups (6 ounces) into the glass measuring cup. Pour the orange juice into the blender.
  5. Drop 3 ice cubes into the blender.
  6. Put the lid on the blender and turn it on. Try different settings and blend until it is smooth with no white pieces of tofu showing, about 1 minute. Turn the blender off.
  7. Remove the lid and pour the smoothies into two glasses. Drink it right away while it's still cold.
* Children should be supervised by an adult.
