Wild Salmon with Kiwi Watermelon Salsa

his delicious and refreshing dish is perfect for a warm summer evening. Colorful, sweet and tangy salsa is appealing to kids and adults alike. The omega-3 fats in wild salmon are vital for people of all ages since they promote heart health, brain development and happiness. If you have children at home, recruit them to help you prepare the salsa for this recipe.

    Salsa Ingredients:
  • 1 14.75-ounce package Juice Harvest watermelon hearts (precut in the produce department), cut into bite-sized chunks
  • 3 kiwifruits, peeled and coarsely chopped
  • 1 ear white corn, husked, cut off the cob
  • 1/2 red onion, diced (about 1 cup)
  • 1 green jalapeno pepper, seeded and minced
  • 1 clove Melissa’s organic garlic, minced
  • 1/2 cup fresh cilantro, minced
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon Morton’s kosher salt
    Salmon Ingredients:
  • -cooking spray
  • 5 5-ounce wild salmon filets, skin removed
  • 1/2 teaspoon Morton’s kosher salt
  • 3/4 teaspoon pepper
    Instructions:
  1. For the salsa, combine all the salsa ingredients in a glass bowl. Mix well, cover, and chill.

  2. For the salmon, preheat the broiler. Spray a broiler pan with cooking spray. Place salmon, skin side down, on pan. Season tops with salt and pepper. Broil for 10-12 minutes. Do not turn. Use a spatula to transfer salmon to plates. Top each piece of salmon with one cup of fresh salsa and serve.
