Sautéed Mixed Mushrooms

his healthful dish is fast, simple,
and delicious. The sauce is tangy and the different mushrooms give the dish an
interesting depth. Pick up a mushroom brush while you're in the produce department
to help you clean your delicate mushrooms quickly and easily.
Ingredients:
- 3 tablespoons Kikkoman light soy sauce
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon sugar
- 1/8 teaspoon pepper
- 2 cloves Melissa's organic garlic, crushed in a garlic press
- 1/2 pound shiitake mushrooms, stems removed
- 1/2 pound oyster mushrooms (2 packages), divided into bunches about the size of each shiitake
- 2 packages enoki mushrooms, bottoms trimmed, divided into nickel-sized bunches
- 1 tablespoon canola oil
Instructions:
Whisk together the soy sauce, lemon juice, lemon zest, sugar, pepper, and garlic; set aside.
Heat a wok or skillet over medium-high heat with canola oil. Add in shiitake mushrooms. Cook, stirring for 1 minute. Add the oyster mushrooms and cook 1 more minute. Add the enoki mushrooms, cook 2 more minutes and pour in the sauce. Toss well and remove from heat. Remove mushrooms with a slotted spoon and serve.
