Spiced Edamame

ummy and EASY! Edamame are green soybeans that are packed with protein, fiber and heart-healthy phytonutrients. They are the perfect snack because they naturally contain a satisfying balance of nutrients for a small amount of calories. This recipe can easily be doubled or tripled. If you want to use the whole bag of frozen edamame, just multiply everything in this recipe by three (and use a bigger pot).

    Ingredients:
  • 2 cups water
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 cup Seapoint Farms unsalted edamame in pods
    Instructions:
  1. Add water to a medium pot with a lid; measure in cumin, coriander, cayenne, salt and pepper. Cover and bring water to a rolling boil. Uncover and add edamame. Return water to a boil and cook uncovered for five more minutes. Drain edamame, but do not rinse. Transfer to a serving bowl or storage container.

  2. Enjoy them warm or cold, but only eat the beans—never the pods. Place one end of the pod between your lips and use your thumb and index finger to squeeze the beans one at a time into your mouth. Discard the pods in a separate bowl.
