Spinach and Grape Salad
Serves 4
Everything about this salad is simple-except for the flavor. It can be thrown together
in a matter of minutes, but it looks and tastes very sophisticated. Although the recipe
is high in fat, walnuts and olive oil are good sources of healthy fat that have been
shown to help lower total cholesterol and triglycerides levels and protect against heart
attacks and strokes.
Ingredients:
1 bag Ready Pac Organic Florentine Blend, washed
1 cup seedless red grapes, preferably organic,
halved
1/3 cup Flanigan Farms walnuts, halves and pieces,
toasted
1/3 cup Athenos reduced fat crumbled Feta cheese
2 tablespoons Alessi White Balsamic Raspberry
Blush Vinegar
1 tablespoon Napa Valley organic extra virgin
olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
Instructions:
In a salad bowl, combine the spinach blend, grapes, toasted walnuts and cheese.
Measure the vinegar, oil, salt and pepper into a small bowl. Whisk them together
and pour over the salad. Toss well and serve.
