Tomato Tomatillo Salsa
Serves 8
Salsa is a healthy and versitile topping. Use it on everything from tortilla
soup to grilled meats and burgers. Add more green jalapeņo if you like it spicier.
Ingredients:
- 4 cluster tomatoes, diced
- 6 tomatillos, husked, washed, stemmed,
and diced
- 1 medium onion, diced
- 1 red jalapeņo pepper, seeded and diced
- 1 green jalapeņo pepper, seeded and diced
- 1 clove garlic, minced
- 1/2 cup cilantro, chopped
- 1 tablespoon lime juice
- 1/4 teaspoon salt
Instructions:
Combine all the ingredients in a glass bowl. Mix well,
cover, and chill. Serve warm or cold over
broiled salmon, tuna, swordfish, chicken breast,
or as a topping for Tortilla Soup.
