his is a fast and easy snack that kids will love to make and eat. For extra convenience, you can purchase tomato slices and lettuce leaves from our service Deli when you pick up the hummus. You can also substitute plain hummus from the regular deli for the Roasted Red Pepper Hummus.
You will need:
A toaster oven ♦ A knife ♦ A plate ♦ A tablespoon measuring spoon
Ingredients:
- 1 slice of tomato
- 1 leaf romaine lettuce
- 1 Judith's Gourmet corn tortilla
- 1 tablespoon Roasted Red Pepper Hummus from our Service Deli
- 1 slice Sargento reduced fat Provolone cheese
Instructions:
Wash and dry the tomato. Turn it upside down so the flattest part is on the plate. Carefully cut a thin slice off the end. Eat it or throw it away. Cut another thin slice.
Tear a leaf off the lettuce head. Tear the tough bottom off that leaf. Wash and dry the tender part of the leaf.
Put one tortilla in the toaster oven and toast for exactly 1 minute. This will just soften up the tortilla, not make it too hot. Turn off the toaster and use tongs or an oven mitt to take the tortilla out. Put it on the plate.
Measure 1 tablespoon of hummus onto the tortilla and use the knife to spread it around. Put the cheese on top of the hummus near the edge closest to you. Put the lettuce leaf on top of the cheese near the edge closest to you. Put the tomato on top of the lettuce near the edge closest to you.
Gently start rolling up the tortilla, starting with the end closest to you and rolling away from you.
Eat it right away before it gets cold.
