Breakfast Trifle

This is a simple and elegant way to have a nutritious breakfast. Use whatever fruit is in season, and look for a bran muffin that is relatively low in sugar and fat, and high in fiber.
Serves: 6
Ingredients:
- 3 cups bran muffins, coarsely crumbled
- 4 cups fresh seasonal fruit, cut into chunks
- 2 cups nonfat vanilla yogurt (of plain yogurt if you prefer a less sweet flavor)
Instructions:
- Spread half the muffin crumbs in the bottom of a large Tupperware or other airtight container. Pour on the fresh fruit. Cover with remaining muffin crumbs. Spoon on the yogurt.
- Cover tightly and refrigerate for at least 5 hours, or overnight.
