t Gelson's you'll find an impressive selection of cheese. At any one time there are more than 100 different varieties of cheese on display in our cases.

Our deli buyer is an expert at selecting both imported and domestic cheese. These cheeses are fresh cut and wrapped on a daily basis, which assures incomparable freshness. If there's a cheese that's not in the store, we'll do our best to try to get it for you.

We also offer our own private label assortment of natural cheese from the choicest farms in the United States.

Descriptions of some of the varieties we carry are listed below:

Brie with Herb A bloomy rind, soft cheese flavored with herbs. Brie is an excellent choice for a cheese board, or for spreading on crackers.

Bufala Mozzarella This soft white cheese with a mild, creamy flavor is made from bufala milk. Serve with sliced tomato and basil in olive oil.

Gelson's Cheese Department Delice Camembert Recognized for its consistent, superior quality, this cheese possesses the richness of double cream. The taste is rich, yet mild and mellow. Delicious when accompanied by crackers, breads or fruits.

Fresh Mozzarella A soft white cheese with a mild, creamy flavor. Best known as the traditional pizza topping; try this delectable cheese on bread with salt, pepper and a little olive oil.

Goat Cheese This cheese made from goat's milk is delightfully tart in flavor, making it easily distinguishable from other cheeses. A wonderful addition to a salad, or to give your omelet a little extra zest!

Gouda Lite A mild cheese, nut-like in flavor, with a characteristic yellow interior dotted with tiny holes. This succulently creamy flavored cheese is particularly delicious with beer, red wines and dark bread.

Montrachet This tall, cylindrical cheese from Burgundy is slightly tangy in flavor, with a creamy, moist and soft texture. Give some excitement to your soufflé by adding Montrachet.

Pecorino Romano Packaged in a cylindrical wheel with a hard yellow rind and a yellowish-white interior, Pecorino Romano is a densely textured cheese with a slightly smoky scent. This cheese may be used in any recipe that calls for Parmesan, if you desire a sharper flavor.
