Chicken with Tomato Basil Relish

his easy and flavorful chicken recipe is perfect for a weeknight dinner. The different colored Heirloom tomatoes make this dish pretty. Use an instant-read kitchen thermometer to take the temperature of the chicken so that you know it is fully cooked (and to prevent over-cooking). Take the pan out of the oven, put the thermometer probe into the center of the thickest part of a piece of chicken and hold it until the gauge needle stops moving, about one minute. Smaller pieces of chicken will reach 165° Fahrenheit before larger pieces, so you may want to remove them from the pan before the larger pieces are done. This will ensure that all of the breasts are moist and tender.

    Ingredients:
  • 1 pound assorted ripe organic heirloom tomatoes, diced
  • 2 cloves organic garlic, minced
  • 1 teaspoon Star capers, rinsed and drained
  • 1/4 teaspoon plus 1/8 teaspoon kosher salt, divided
  • 1/4 teaspoon plus 1/8 teaspoon black pepper, divided
  • 2 tablespoons Napa Valley organic extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Maille old style whole-grain mustard
  • 4 Rosie Organic boneless skinless chicken breasts (about 1 1/2 pounds total)
  • 1/2 cup lightly packed slivered organic basil leaves
    Instructions:
  1. Preheat broiler.

  2. Place diced tomatoes, garlic and capers in a glass bowl and season with 1/8 teaspoon each salt and pepper. Let stand for five to 15 minutes. Stir in olive oil, vinegar and mustard. Remove four tablespoons of the liquid and set aside.

  3. Place chicken in a large baking dish or pan with sides. Brush tops with reserved relish liquid and season with remaining salt and pepper. Cook seven minutes; remove chicken from oven, turn the pieces and add tomato relish to the pan, brushing some of the juices on chicken tops. Cook six to nine more minutes, until the internal temperature in the thickest part of the chicken reaches 165° Fahrenheit on an instant-read thermometer. Transfer chicken to a serving platter. Stir basil into tomatoes to wilt. Spoon tomato relish over chicken breasts to serve.
