Curried Cauliflower

oasting cauliflower is one of my favorite ways to prepare this super-healthful vegetable. This recipe adds a twist to a simpler one by using curry powder, almonds and raisins for an exotic Indian-inspired flavor.

    Ingredients:
  • 1 large head organic cauliflower, cut into uniform pieces
  • 1 tablespoon Napa Valley organic olive oil
  • 2 tablespoons red wine vinegar
  • 1/8 teaspoon iodized salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 teaspoon Bombay Brand curry powder
  • 3 tablespoons Marcona almonds
  • 3 tablespoons Earthbound Farm organic jumbo Thompson seedless raisins, soaked in hot water for ten minutes, drained
    Instructions:
  1. Preheat oven to 400°F.

  2. Place florets in a medium bowl. In a small cup or bowl, combine the olive oil, vinegar, salt, pepper, garlic powder and curry powder. Toss cauliflower with oil and seasonings.

  3. Transfer to a baking dish or pan and arrange in a single layer. Cook for about 30 minutes, shaking the pan or turning the veggies every ten minutes. Add in the almonds and plumped raisins. Cook about ten more minutes. Cauliflower is ready when it starts to brown on the outside. Serve hot.
