Heart-Healthy Arugula Salad

his light and simple salad is chock-full of anti-inflammatory, heart-healthy ingredients. Antioxidants from blueberries, arugula, apples, olive oil and lemon juice combine with healthful omega-3 fatty acids from walnuts and monounsaturated fats from extra virgin olive oil to do your heart and brain good.

    Ingredients:
  • 6 ounces organic baby arugula
  • 1 6-ounce container blueberries
  • 1 organic Braeburn or other crisp apple, diced
  • 1/2 cup Flanigan Farms walnut halves and pieces
  • 5 teaspoon Napa Valley organic extra virgin olive oil
  • 4 teaspoons fresh lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
    Instructions:
  1. Combine arugula, blueberries, apple pieces and nuts in a salad bowl.

  2. Whisk together the lemon juice, olive oil, salt and pepper. Just before serving, gently toss the dressing with the salad.
