his light and simple salad is chock-full of anti-inflammatory, heart-healthy ingredients. Antioxidants from blueberries, arugula, apples, olive oil and lemon juice combine with healthful omega-3 fatty acids from walnuts and monounsaturated fats from extra virgin olive oil to do your heart and brain good.
Ingredients:
- 6 ounces organic baby arugula
- 1 6-ounce container blueberries
- 1 organic Braeburn or other crisp apple, diced
- 1/2 cup Flanigan Farms walnut halves and pieces
- 5 teaspoon Napa Valley organic extra virgin olive oil
- 4 teaspoons fresh lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
Instructions:
Combine arugula, blueberries, apple pieces and nuts in a salad bowl.
Whisk together the lemon juice, olive oil, salt and pepper. Just before serving, gently toss the dressing with the salad.
