Icebox Blueberry Applesauce

his no-cook food processor applesauce recipe is easy and requires very little attention. Plan to make it at least a day in advance of eating it, so you will have enough time to freeze and thaw the apples. This method preserves more of the nutrients in the apples than cooking. If you have children, bring them into the kitchen to help you measure and blend the ingredients together. For easiest preparation, peel the apples while they are still whole using a vegetable peeler.

    Ingredients:
  • 2 organic Granny Smith apples, peeled, quartered and cored
  • 2 organic Fuji apples, peeled, quartered and cored
  • 2 organic Gala apple apples, peeled, quartered and cored
  • 1 package frozen Woodstock Farms organic wild blueberries (about 1 1/4cups), thawed
  • 1/4 cup fresh lemon juice
  • 3/4 teaspoon ground cinnamon
    Instructions:
  1. Place apple quarters in a one gallon resealable freezer bag. Freeze overnight and up to several days. Remove frozen apples from freezer and thaw on the counter for about two hours, or leave them in the refrigerator for several hours, until they give slightly when you squeeze them. Coarsely slice thawed apples.

  2. Place blueberries in the bottom of the work bowl of a large food processor (at least 7 cup capacity). Add as much of the apples as will fit, lemon juice and cinnamon. Process for about three minutes, until no apple chunks remain. Add remaining apples and process until no chunks remain. There will be blueberry flecks in the sauce. Serve, refrigerate or re-freeze.
