Mixed Berry and Almond Oatmeal

his hearty breakfast dish is made with satisfying steel-cut oats, almonds and soy milk. The combination of the whole intact grain, healthful fat, protein and fiber make this an ideal way to start the day, especially if you are trying to lose weight. Don’t be afraid to try this with soy milk since this particular one tastes great, is high in protein and low in sugar. This recipe will keep for up to five days in the refrigerator without the fresh fruit and almonds so make a big batch and then reheat the portion you will eat in the microwave or on the stove.

    Ingredients:
  • 2 cups Westsoy organic unsweetened vanilla soy milk, plus more for re-heating
  • 2 cups water
  • 1/8 teaspoon kosher salt
  • 1 cup Bob’s Red Mill steel cut oats
  • 1 teaspoon Spice Islands vanilla extract
  • 2 teaspoons Wholesome Sweeteners organic raw blue agave nectar
  • 1 ½ teaspoons ground cinnamon
  • 1/4 cup Newman’s Own Organics dried organic berry blend
  • 4 tablespoons Flanigan Farms slivered almonds, divided into 4 portions
  • 1 5.6-ounce package blackberries, divided into 4 portions
  • 1 organic Fuji apple, diced, divided into 4 portions
    Instructions:
  1. Combine the soy milk, water and salt in a large, deep saucepan and bring to a foamy boil. Slowly stir in the oats; reduce heat to low, cover and cook 15 minutes, stirring occasionally. Stir in the vanilla, agave nectar, cinnamon and dried fruit; cover and cook 15-20 more minutes until oats are tender and most of the liquid is absorbed. Add almonds and fresh fruit to the portion you are going to eat immediately and store the rest of the oatmeal in the refrigerator. To reheat, add almonds, fresh fruit and a little more soy milk and heat in the microwave or on the stove.
