t’s important to have a recipe for a simple salad that you can throw together in a few minutes on hectic evenings. I always encourage people to add more beans to their diets and green salads are an excellent opportunity to work in these heart-healthy plant proteins. Kidney and garbanzo beans are my personal favorites when I make salad.
Ingredients:
- 1 7-ounce package Earthbound Farms Organic baby romaine hearts, torn
- 1 package Del Cabo organic Sweet 100 cherry tomatoes
- 1/2 small organic avocado, diced
- 1 cup Ready Pac shredded red cabbage
- 1 cup Natural Directions organic kidney beans, rinsed and drained
- 1 cup Natural Directions organic garbanzo beans, rinsed and drained
- 2 hardboiled eggs, chopped (homemade or from our salad bar)
- 5 tablespoons Bragg organic healthy vinaigrette
- 2 teaspoons Dijon mustard
Instructions:
Combine the lettuce, tomatoes, avocado, cabbage, beans and eggs in a large salad bowl.
Whisk together the vinaigrette and the mustard. Toss with the salad before serving.
