his colorful and unusual salad is a nice change of pace from a typical leafy green salad. The tartness from the vinegar and cabbage balance out the sweetness of the sugar snap peas perfectly. Peas are a great source of zinc, an essential trace mineral.
Ingredients:
- 5 teaspoons white wine vinegar
- 1 tablespoon Napa Valley organic olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bag Mann’s stringless sugar snap peas
- 1/4 head red cabbage, thinly sliced
- 4 tablespoons Flanigan Farms cashews, toasted
- 2 tablespoons Chavrie goat cheese, crumbled
Instructions:
In a small cup or bowl combine the vinegar, olive oil, salt and pepper.
In a salad bowl, combine snap peas, cabbage, cashews and goat cheese. Toss dressing with salad and serve.
