Snap Pea and Cabbage Salad

his colorful and unusual salad is a nice change of pace from a typical leafy green salad. The tartness from the vinegar and cabbage balance out the sweetness of the sugar snap peas perfectly. Peas are a great source of zinc, an essential trace mineral.

    Ingredients:
  • 5 teaspoons white wine vinegar
  • 1 tablespoon Napa Valley organic olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bag Mann’s stringless sugar snap peas
  • 1/4 head red cabbage, thinly sliced
  • 4 tablespoons Flanigan Farms cashews, toasted
  • 2 tablespoons Chavrie goat cheese, crumbled
    Instructions:
  1. In a small cup or bowl combine the vinegar, olive oil, salt and pepper.

  2. In a salad bowl, combine snap peas, cabbage, cashews and goat cheese. Toss dressing with salad and serve.
