imply cooked vegetables make the best side dishes. Fresh vegetables need very few ingredients to bring out their wonderful flavors. In this case, mint and parsley are all you need to make these sugar snap peas sing. Be sure not to overcook the peas or they will lose their crunch.
Ingredients:
- 4 sprigs Bon Appétit fresh organic mint, plus 2 teaspoons minced leaves
- 2 8-ounce bags Mann’s stringless sugar snap peas
- 1 teaspoon Napa Valley organic olive oil
- 1 teaspoon minced Italian parsley
- -pinch sea salt
- 1/8 teaspoon black pepper
Instructions:
Fill a medium pot with a lid with one inch of water. Add four mint sprigs. Place a steamer basket in the pot; cover and cook over high heat. Bring to a boil and add snap peas. Cook four minutes, until peas are bright green and plump, not shriveled.
Immediately transfer peas to a serving bowl and toss with olive oil, remaining mint, parsley, salt and pepper.
