Spiced Butternut Squash

his is a simple and delightful side dish that will have your family asking for second helpings. If that is the case, this recipe can easily be doubled or tripled. The spices I use to season the squash are extremely healthful and they compliment the caramelized sweetness of the vegetable perfectly.

    Ingredients:
  • 2 8-ounce bags Veg-Land organic butternut squash pieces, cut into uniform 1/2-inch cubes
  • 1 tablespoon Napa Valley organic olive oil
  • 1/8 teaspoon McCormick organic cayenne pepper
  • 1/4 teaspoon Spice Hunter organic ground cumin
  • 1/8 teaspoon McCormick ground turmeric
  • 1/4 teaspoon salt
  • 1/4 teaspoon McCormick organic black pepper
  • 1 large clove Melissa's organic garlic, crushed
    Instructions:
  1. Preheat oven to 400° Fahrenheit.

  2. Toss all ingredients together in a roasting pan and arrange in a single layer. Cook 30-40 minutes, until squash is tender and beginning to brown on the edges, tossing occasionally.
