Sweet Nectarine Nachos

These might sound strange but they are a hit with “kids” of all ages! The nectarines add beautiful color and the baked, slightly sweetened tortillas are fun to dip. These nachos make great snacks or desserts. If you are short on time, try using instant pudding or fat free vanilla Jello snack pudding instead of the cooked pudding. You can substitute any fruit for the nectarines. It is especially tasty with berries, bananas or peaches. For more nutrition and less sodium, substitute vanilla or fruit-flavored yogurt for the pudding.

Serves: 4 (Serving Size: 8 chips per person plus dip)

  • 4 soft taco-sized flour tortillas
  • ½ tsp. cinnamon
  • 2 tsp. sugar
  • 1 pound nectarines, chopped
  • 2 cups Vanilla pudding made with fat-free or 1% milk
  • Water for wetting tortillas
    Instructions:
  1. Prepare pudding as directed. Allow to set.
  2. Combine sugar and cinnamon in a small bowl and preheat oven to 350° F.
  3. Brush tortillas with water just until slightly moist. Sprinkle with sugar mixture. Cut each tortilla into 8 wedges.
  4. Spread wedges on a cookie rack and place in preheated oven. Bake for 10 minutes or until crispy.
  5. Serve as individual portions in wide-mouthed bowls. Spoon ½ cup pudding into the bowl and cover with ¼ of the chopped nectarines. Garnish with the “chips” around the edge of the bowl.
