Tomato and Avocado with Pine Nuts

his four ingredient recipe is awesome because it is a snap to make and is very flavorful. I serve it as a first course or as a vegetable side dish. Make this the first recipe you prepare for dinner so that the tomato and avocado can marinate while you get the rest of your meal together.

    Ingredients:
  • 1 12-ounce bag Nature Sweet cherry tomatoes, halved
  • 1 large firm but ripe avocado, diced
  • 2 tablespoons Garlic Expressions salad dressing
  • 1 tablespoon Flanigan Farms pignolias, toasted
    Instructions:
  1. Combine the tomatoes and avocado in a serving bowl. Toss with salad dressing and let stand at least 15 minutes, stirring occasionally. Stir in toasted pine nuts before serving.
