Whitefish with Lime-Pepita Sauce

hitefish is an excellent source of heart-healthy omega-3 fatty acids, and it’s easy to prepare. This Mexican-flavored recipe is perfect for a quick weeknight dinner, since it only takes a few minutes to make.

    Ingredients:
  • 2 tablespoons Flanigan Farms pepitas
  • 1 tablespoon Napa Valley organic olive oil, divided
  • 4 5-ounce whitefish fillets
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon Horizon Organic butter
  • 1/4 generous teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 4 teaspoons fresh minced cilantro leaves
    Instructions:
  1. Heat a large skillet over medium heat and add pepitas. Cook, stirring occasionally, until just fragrant, about three minutes. Set pepitas aside to cool.

  2. Add 2 teaspoons olive oil to the pan and heat over medium heat. Add whitefish, skin side down and cook three minutes, until skin is golden. Turn fish over and cook three more minutes. Discard skin from tops of fish.

  3. Remove pan from heat and transfer fish to a serving platter. Add lime zest, lime juice, butter, cumin, chili powder, pepitas and remaining teaspoon of olive oil to the pan. Return to heat and stir until butter melts, scraping up brown bits from the bottom of the pan. Spoon mixture evenly over the fish. Garnish with cilantro and serve.
