This is a tasty but simple recipe that allows you to concentrate on the rest of your meal preparations while it cooks. It can be multiplied a number of times, depending on how many people you are serving.
Ingredients:
- 1 acorn squash, washed and split
lengthwise
- 1/8 teaspoon salt
- 2 tablespoons Santa Cruz Organic
cinnamon apple sauce
Directions:
. Preheat oven to 375ºF. Add 1/4 cup water to a glass baking dish. Scoop the seeds and strings out of the squash. Place squash cut side down in dish and bake until tender, about 30-40 minutes.
Turn cut side up and season with a little salt. Use a spoon to gently scrape the flesh away from the rind and mash it up a bit. Mix 1 tablespoon of applesauce into each half. Return to the oven and cook until heated through, about 10 minutes. Serve in their very own squash bowls.
