This is a great way to make a nutritious homemade meal in a matter of minutes.
Gelson's Salad Bar has most of the fresh ingredients you need for this pizza,
so stop by and pick up your broccoli, mushrooms, onions, cherry tomatoes and
beans. Feel free to improvise with any other fresh veggies that catch your eye.
Ingredients:
- 1 Boboli thin crust pizza shell
- 1/2 cup Classico di Napoli Tomato & Basil pasta
sauce or other tomato sauce
- 2 large white mushrooms, sliced
- 1/2 onion, sliced
- 1/2 cup cooked broccoli, cut into tiny florets
- 1/2 zucchini, thinly sliced into circles
- 8 asparagus spears, cooked and cut into bite
sized pieces
- 8 cherry tomatoes, cut into quarters
- 1/2 cup black beans or other beans
- 1/2 cup Gelson's Finest low moisture,
part-skimmed shredded Mozzarella cheese
- 2 tablespoons shredded Reggiano Parmesan
cheese (optional)
Instructions:
Preheat the oven to 450º. Place pizza shell on a baking
sheet. Evenly spread the tomato sauce on the
shell, leaving 1/2-1 inch around the edge for
a crust. Layer on the vegetables and beans.
Sprinkle the cheeses evenly over the top and
bake 8-10 minutes until the cheese is melted.
Cut into 4 pieces with a pizza cutter and serve.
