Roasted Red Pepper Pesto
This pesto is delicious tossed with pasta or broccoli. It also makes a delicious sauce for gilled chicken. It is not low in fat, but contains very little saturated-fat and provides 4 grams of protein per serving.
Serves: approx 1-½ cups pesto (Serving size: ½ cup pesto)
Ingredients:
- 1 container Gelson's finest roasted red peppers, drained well
- ½ cup fresh cilantro leaves
- 3 Tbsps. olive oil
- 3 Tbsps. balasmic vinegar
- 1 small garlic clove, chopped
- ½ tsp. dry mustard
- ½ tsp. ground coriander
- Pinch of ground cinnamon
- ½ cup whole toasted almonds (about 2-½ oz.)
- Sea salt and fresh ground pepper to taste
Instructions:
- Purée first 8 ingredients in a food processor until almost smooth.
- Add nuts and process until finely chopped, but no ground. Season with salt and pepper.
- Toss with pasta, vegetable or chicken.
