Roasted Red Pepper Pesto

This pesto is delicious tossed with pasta or broccoli. It also makes a delicious sauce for gilled chicken. It is not low in fat, but contains very little saturated-fat and provides 4 grams of protein per serving.

Serves: approx 1-½ cups pesto (Serving size: ½ cup pesto)

  • 1 container Gelson's finest roasted red peppers, drained well
  • ½ cup fresh cilantro leaves
  • 3 Tbsps. olive oil
  • 3 Tbsps. balasmic vinegar
  • 1 small garlic clove, chopped
  • ½ tsp. dry mustard
  • ½ tsp. ground coriander
  • Pinch of ground cinnamon
  • ½ cup whole toasted almonds (about 2-½ oz.)
  • Sea salt and fresh ground pepper to taste
    Instructions:
  1. Purée first 8 ingredients in a food processor until almost smooth.
  2. Add nuts and process until finely chopped, but no ground. Season with salt and pepper.
  3. Toss with pasta, vegetable or chicken.
