Rum Spiced Beans

These tasty beans are a wonderful variation from traditional baked beans. Not only are they delicious as a side dish, they also make terrific burritos or can be eaten like chili with baked tortilla chips or crackers.

Serves: 8 (Serving size: ½ cup)

    Ingredients:

  • 2 cans pinto beans, preferably unsalted
  • ½ onion, finely chopped
  • ½ green bell pepper, finely chopped
  • 2 Tbsps. spiced rum
  • 1 Tbsp. catsup
  • 1 Tbsp. Dijon mustard
  • 2 tsps. cider vinegar
  • 2 tsps. Worchestershire sauce
  • ½ tsp. cinnamon
  • 1 dash Tabasco sauce
  • ½ cup water
  • Sea salt and freshly ground pepper to taste
    Instructions:
  1. Rinse one can of beans. Use the liquid from the other can in the dish.
  2. Add all ingredients to a saucepan and bring to a slow boil over low heat. Simmer until the green pepper is soft and flavors are combined, stirring occasionally.
