Rum Spiced Beans
These tasty beans are a wonderful variation from traditional baked beans. Not only are they delicious as a side dish, they also make terrific burritos or can be eaten like chili with baked tortilla chips or crackers.
Serves: 8 (Serving size: ½ cup)
Ingredients:
- 2 cans pinto beans, preferably unsalted
- ½ onion, finely chopped
- ½ green bell pepper, finely chopped
- 2 Tbsps. spiced rum
- 1 Tbsp. catsup
- 1 Tbsp. Dijon mustard
- 2 tsps. cider vinegar
- 2 tsps. Worchestershire sauce
- ½ tsp. cinnamon
- 1 dash Tabasco sauce
- ½ cup water
- Sea salt and freshly ground pepper to taste
Instructions:
- Rinse one can of beans. Use the liquid from the other can in the dish.
- Add all ingredients to a saucepan and bring to a slow boil over low heat. Simmer until the green pepper is soft and flavors are combined, stirring occasionally.
