Wild Salmon with Kiwi-Watermelon Salsa

ummer is the perfect time to take advantage of the wonderful, fresh wild salmon in our seafood departments. Colorful, sweet and tangy salsa is appealing to kids and adults alike. The omega-3 fats in wild salmon are vital for people of all ages since they can promote heart health and brain development.

    Salsa Ingredients:
  • 1 pound precut watermelon hearts, cut into bite-sized chunks
  • 3 kiwis, peeled and coarsely chopped
  • 1 ear yellow or white corn, husked, kernels cut off the cob
  • 1/2 red onion, diced (about 1 cup)
  • 1 green jalapeno pepper, seeded and minced
  • 1 clove Melissa's organic garlic, minced
  • 1/2 cup fresh cilantro, minced
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon Le Saunier de Camargne /i> Fleur de Sel sea salt
    Salmon Ingredients:
  • -olive oil cooking spray
  • 5 5-ounce wild salmon filets
  • 1/2 teaspoon Le Saunier de Camargne Fleur de Sel sea salt
  • 3/4 teaspoon pepper
    Instructions:
  1. For the salsa, combine all the salsa ingredients in a glass bowl. Mix well, cover and chill.

  2. For the salmon, preheat the broiler. Spray a broiler pan with cooking spray. Place salmon, skin side down, on pan. Season tops with salt and pepper. Broil for ten to 12 minutes. Do not turn. Top each piece of salmon with 1 cup of fresh salsa and serve.
