Broiled Salmon Fillet with Tangy Tomato Salsa

Serves 4
    Ingredients:
  • 5 large tomatoes chopped (approx. 4 1/2 cups)
  • 1/2 cup red onion, finely chopped
  • 2 Tbsp. fresh mint, finely chopped
  • 2 Tbsp. fresh basil, finely chopped
  • 2 Tbsp. jalapeno pepper, seeded and finely chopped
  • 2 Tbsp. lime juice
  • 6 oz. ea. salmon fillets
  • 4 Tbsp. Dijon mustard
  • 1 Tbsp. pepper, coarsely ground
    Instructions:
  1. Combine first 6 ingredients in a bowl and mix together.
  2. Place salmon on a broiler pan coated with cooking spray.
  3. Spread the top of each fillet with mustard and sprinkle with pepper.
  4. Broil for 10 minutes or until desired degree of doneness.
  5. Let stand 2 minutes.
