Broiled Salmon Fillet with Tangy Tomato Salsa
Serves 4
Ingredients:
- 5 large tomatoes chopped (approx. 4 1/2 cups)
- 1/2 cup red onion, finely chopped
- 2 Tbsp. fresh mint, finely chopped
- 2 Tbsp. fresh basil, finely chopped
- 2 Tbsp. jalapeno pepper, seeded and finely chopped
- 2 Tbsp. lime juice
- 6 oz. ea. salmon fillets
- 4 Tbsp. Dijon mustard
- 1 Tbsp. pepper, coarsely ground
Instructions:
- Combine first 6 ingredients in a bowl and mix together.
- Place salmon on a broiler pan coated with cooking spray.
- Spread the top of each fillet with mustard and sprinkle with pepper.
- Broil for 10 minutes or until desired degree of doneness.
- Let stand 2 minutes.
