Pineapple Mint Smash

This one goes out to the pineapple lovers! It’s chunks of fresh pineapple muddled up with a little lemon, coconut sugar, vodka, and a handful of mint — and then topped off with club soda. The vodka is so mellow, it really lets the mint and pineapple shine, and then there’s a pleasant coconut finish. It tastes very fruity and refreshing, and yet not too juicy.

Which is to say that, even with all the pineapples and coconuts, it’s a light, sophisticated drink. Sipping it will make you feel like you’re on a fancy beach vacation even if you’re only solo on the patio. Bring out a floppy hat, a magazine, and the radio to amplify that effect!

Our tip: This drink is so mild, it’s perfect for a spring brunch with the S.O. or a convivial happy hour. Wanna get even more tropical with it? Try topping it off with LaCroix mango, coconut, or passion fruit.

Ingredients

2 lemon wedges

2 pineapple chunks

2 bar spoons coconut sugar

2 oz / 60 ml Belvedere vodka

½ oz lemon juice

8 mint leaves

1 dash simple syrup

2 oz club soda

Pineapple wedge and mint for garnish, optional

Directions

  1. Muddle the fruit in the base of a shaker with the coconut sugar.

  2. Add Belvedere vodka, lemon juice, mint leaves, and simple syrup, and shake with ice.

  3. Strain into a rocks glass over ice, and top with club soda. Garnish with a wedge of pineapple and a mint sprig.
