The Sweet Pea Cocktail

Green is one of our favorite colors, mostly because it’s proof that spring has sprung: it’s the color of unfurling tulip tree buds, curly garlic scapes, and the wild, lacy fringe of poppy leaves. It’s also the color of peas, which we’ve used here to create a drink that’s boozy and layered enough for the tasting room of any small-batch distillery — and delightful enough for spring.

To make it, we muddle up a handful of peas and basil with simple syrup, creating the mildly sweet, basil-forward base that gives the drink its verdant glow. We love how all that green stuff tastes shaken up with a little (okay, a generous pour of) Hendrick’s gin, elderflower liqueur, and lemon — together, they add a bright, distinctly floral note that seems to open the drink up, softening the basil’s peppery herbaceousness and bringing out all the peas’ starchy personality.

The Sweet Pea Cocktail

Serves: 1

Ingredients

2 Tbsp shelled English or snap peas
5 Gelson’s organic basil leaves, plus more for garnish
½ oz simple syrup
2 oz Hendrick’s gin
½ oz lemon juice
¼ oz St. Germain
Ice

Directions

  1. In the bottom of a cocktail shaker, muddle the peas, basil, and simple syrup.
  2. Add the remaining ingredients and shake vigorously.
  3. Double-strain the cocktail into a coupe glass.
  4. Garnish with a skewered basil leaf, and serve.
