One-Pan Sausage and Pepper Medley

In celebration of the last days of Oktoberfest, at Gelson's Market put together this very simple dish — a medley of bell peppers, onions, and bratwurst roasted together in a single pan. You could use any sausage in this recipe, but we like Howe’s Bavarian Bratwurst because they’re precooked, so all you’re really doing is browning them up, which saves some time in the kitchen.

We also like Howe’s for their firm texture and mild, savory flavor, which provides such a nice contrast under all those sweet roasted peppers and onions. Our tip: Pile all the ingredients in a French roll smeared with a good amount of your favorite mustard — and then pair your sandwich with beer.

Ingredients

1 red pepper, seeded and sliced
1 orange pepper, seeded and sliced
1 yellow pepper, seeded and sliced
1 white onion, sliced
Olive oil
Salt and pepper
4 Howe’s Oktoberfest Bavarian Bratwurst
4 French rolls
Mustard, optional

Directions

  1. Preheat oven to 425º.
  2. Arrange peppers and onions on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat, spreading them out in a single layer.
  3. Poke sausages with a sharp knife, and add them to the pan.
  4. Roast in the oven for 25 – 30 minutes, flipping the veggies and sausages once during cooking, so that they cook evenly.
  5. Serve on French roll with the mustard of your choice.
