3 Amazing Kefir Parfaits

As a famous and wise donkey once said, everybody loves parfaits — parfaits have layers! It’s so true, and that’s why we start these parfaits with a super smooth, creamy, and fluffy cinnamon-vanilla kefir (hello, probiotics!) thickened with Greek yogurt so that it can hold up all the other layers. And then we let it rip, piling on the goodies so that each parfait has seven nutrient-packed layers, including a crunchy honey granola, plenty of fruit, nuts, seeds, and even chocolate.

There’s truly something here for every breakfast mood. Our tips: If you’re making these for a brunch, you could put out all the ingredients, and let folks mix and match. We’ve also taken to packing these for work lunches. The only challenge is waiting for the midday to eat them!

Strawberry-Pineapple Parfait

This parfait is sweet, crisp, and reminiscent of a tropical smoothie. We love the finely chopped pineapple. It’s the perfect fresh and juicy companion to the chia seeds and granola.

Ingredients

4 Tbsp cinnamon-vanilla kefir, divided (recipe below)
4 Tbsp Bob’s Red Mill honey oat granola
¼ cup diced strawberries, gently mashed
1 Tbsp chia seeds
¼ cup diced pineapple

Directions

  1. Layer the ingredients in this order: half the kefir, half the granola, strawberries, chia seeds, remaining kefir, remaining granola, diced pineapple.


Blueberry-Raspberry Parfait

Sweet blueberries and tart raspberries together at last in a bright, fresh classic parfait! The hemp hearts add a nutty, earthy flavor and wonderful texture — so nice and chewy.

Ingredients

4 Tbsp cinnamon-vanilla kefir, divided (recipe below)
4 Tbsp Bob’s Red Mill honey oat granola
¼ blueberries
1 Tbsp hemp hearts
¼ cup raspberries, slightly mashed

Directions

  1. Layer the ingredients in this order: half the kefir, half the granola, blueberries, hemp hearts, remaining kefir, remaining granola, raspberries.


Chocolate-Walnut Parfait

This one is our favorite because the bitter chocolate pairs so well with the sweet, soft banana and the crunchy nuts. And because, truth be told, it tastes like dessert.

Ingredients

4 Tbsp cinnamon-vanilla kefir, divided (recipe below)
4 Tbsp Bob’s Red Mill honey oat granola
½ banana, sliced
½ cup chopped walnuts, toasted
1 Tbsp dark chocolate chunks

Directions

  1. Layer the ingredients in this order: half the kefir, half the granola, bananas, chopped walnuts, remaining kefir, remaining granola, dark chocolate chunks


Cinnamon-Vanilla Kefir

¾ cup plain kefir
¾ cup Greek yogurt
1 tsp honey
⅛ tsp cinnamon
⅛ tsp vanilla

Directions

  1. In a small bowl, combine all the ingredients.
