Curried Garbanzo Bean Salad

Serves: 6

Ingredients

1 tablespoon McCormick Gourmet Collection curry powder
1/4 teaspoon ground cinnamon
1/4 teaspoon black pepper
1/4 teaspoon Le Saunier de Camargue fleur de sel sea salt
1 large clove Melissas organic garlic minced
1/4 cup Stonyfield organic 0 plain Greek yogurt
1/4 cup fresh lime juice
2 tablespoons Napa Valley organic olive oil
2 cans Organic garbanzo beans rinsed and drained
1 cup Del Cabo organic sweet 100 cherry tomatoes halved
1/2 cup chopped cilantro leaves
1/2 cup Ready Pac shredded carrots
4 scallions thinly sliced
1 5 ounce package Gelsons Finest organic arugula
1/2 cup pomegranate seeds
1/2 ripe avocado diced small

Directions

In a small bowl combine curry powder, cinnamon, pepper, salt, garlic, yogurt, lime juice, and olive oil. Set aside while you make the salad.

In a salad bowl combine the remaining ingredients. Toss with dressing before serving.
